Microbial Biofilm in a Dairy and its Role on the Shelf-Life of Products

Presentation of a work carried out by ICF Srl in a dairy producing stretched curd cheeses with shelf-life problems related to the presence of microbial biofilm in the milk processing plant.

This work examined the causes that generated the problem, the identification of the microbial biofilm in the plant, the removal of the same with specific extraordinary sanitation protocols and the corrective actions to avoid its reformation.
